Chicken Parmigiana

I have been cooking Italian food for family and friends since I can remember. My kids would bring their friends over to try all my new recipes. Cooking is a great way to bring your family and friends together.

Everyone is always asking for this one.

CHICKEN PARMIGIANA

Ingredients:

Skinless/Boneless Chicken Breasts (2 or 4) If thick cut in half-length wise.

Egg whites only (Slightly Beaten) in a Bowl

Flour (Tablespoon or more as needed) in a Bowl

Panko (Japanese style) Bread Crumbs (Italian Flavored about a cup) in a bowl. L

Mozzarella Cheese (Slice for each Breast)

Spaghetti Sauce (Homemade preferred)

*Preheat Oven to 350 Degrees

*Wash and dry Breasts, place between two pieces of wax paper or Saran wrap pound to flatten to about ¼ inch with a mallet or rolling pin.

*Dredge in the flour, Dip in the egg whites, Roll in the breadcrumbs to coat both sides (press crumbs to be sure they stick). Fry in Oil (about 3 minutes) until golden brown, flip and do same thing on other side, drain on paper towels.

*Place breasts on baking pan or cookie sheet (line with aluminum foil for ease in cleanup), Cover each breast with some sauce, bake for about 10 minutes, then place a slice of cheese on each breast, return to oven, shut oven off and leave breasts in oven for about 5 minutes.

Serve with Spaghetti, Spaghetti Sauce and a salad (and your favorite wine will go great).

NOTE: One breast for each person or if you know someone is a big eater you better make more, most will go back for seconds so make plenty (you can always eat leftovers the next day)
